It's fresh! It's spicy! It's delicious! It's Rae Pad Thai!
Simply slice your favorite veggies- I used red bell pepper, purple cabbage, golden beets, shredded kale, jalepeno, and shredded swiss chard. Top with my yummy Pad Thai sauce. To make the sauce, whisk together about 1/2 cup raw smooth almond butter, juice of one lime, a good splash of wheat free Tamari, and chili pepper flakes. If the sauce is too thick, add more lime and Tamari. Top your shredded veggies and add black sesame seed and hemp seeds for color and nutrition.
Another variation is to make my veggie salad:
Same idea with the addition of avocado and served with squeezed fresh lime juice. Also tasty!
